What would make the function desirable to hook? Do some functions get scanned by the anti-cheat while others do not?

That makes so much more sense! That explains why you need to hook a d3d menu (so you can use the function to draw the menu). Any tips for finding a function to hook (as in, reverse engineering)?
Good question, this --> https://guidedhacking.com/showthread.php?6302-Gathering-Function-Parameters-Part-1-10 <-- should cover finding functions and their parameters. Basically, when your health is subtracted, or your ammo is, or even just an event is triggered, it's happening inside a function. Tracing up from the instruction you found, or tracing downwards and out of the return to after the call that started it will give you the start of a function.

Yes. Also certain functions may handle certain variables that you wanna mess around with.

For example a setTexture hook will easily allow you to overwrite the texture being currently written to the model?

Yep, this and basically anything else that you can think of.
